Tasting notes: Deep straw yellow. Intense and elegant with floral notes of White Rose and Hawthorn followed by scents of Citrus and Green Apple. Fresh and smooth with a fruity taste on the palate

Pairing Suggestion: Excellent as an aperitif, yet this wine is also a perfect companion for delicate salami, cold cuts meats and fish dishes

Soil: Stony and sandy hills, rich in calcium

Harvest: Early September

Vinification: Martinotti Method. A light pressing of the Lambrusco grapes will produce must from which skins are immediately separated. This juice goes through a temperature-controlled fermentation phase. Next comes a period of decanting until December/January to allow a natural cleaning of the base wine. After this phase, the wine is stored in temperature-controlled, constant-pressure tanks for 2 months. During this period, a long second fermentation gives to to you its elegant and pleasant “perlage”
