Vinification: Martinotti Method. A light pressing of the Lambrusco grapes will produce must from which skins are immediately separated. This juice goes through a temperature-controlled fermentation phase. Next comes a period of decanting until December/January to allow a natural cleaning of the base wine. After this phase, the wine is stored in temperature-controlled, constant-pressure tanks for 2 months. During this period, a long second fermentation gives to to you its elegant and pleasant “perlage”
