Vinification: Temperature-controlled maceration. Aging in used French oak barriques for a few months. Aging in the bottle to follow. 
Alcohol: 13.5% ABV
Food Pairings: The acidity of the wine makes it a perfect match for delicately-flavored and white meats. Its minerality and stone fruit notes are perfect for balancing out the creaminess of fresh cheeses; it also pairs very well with young and semi-hard cheeses, freshwater fish, grilled chicken and seafood pasta dishes.
