Vinification: 100% Nero d’Avola maturing around the first week of September. This wine is obtained from grapes that have reached perfect aromatic and polyphenolic maturation. Destemming and alcoholic fermentation with the skins occurs for 8-10 days at 20-22 degrees. Malolactic Fermentation, then finally aging occurs for 6 months in sur lie.
Alcohol: 13% VOL
Sensory features: precise aromas of red cherries, stone minerals and aromatic herbs. Fresh and juicy, with a delicate spicy note and a refreshing aftertaste in the long finish. A charming, medium-bodied wine with a harmonious taste and a wonderful drinking flow.
Pairing: it’s an excellent wine to have with food or on its own. The Nero d’Avola wine pairs perfectly with roasted and grilled red meat and also with fish like Grilled marinated tuna fish.It maches also with meatballs, roasted lamb, pasta with tomato base sauces, with beef stews, roast turkey or game dishes.
